Our story

A small bakery, a big appetite for mornings.

We started with one idea: York deserved a bagel worth waking up for.

Every batch here starts the day before — dough mixed slow, rested cold overnight, then hand-rolled at first light. We boil each one in a copper kettle (that's what gives you the chew), roll it in seeds or salt, and bake it on stone until the crust cracks when you tap it.

The rest is the room: honest coffee, a couple of stools by the window, and neighbors who know each other's orders. If you're passing through Kittery or York on your way to the water, we'd love to send you off with something warm in your hand.

01 the night before

Slow-mixed dough

Flour, water, malt, salt. We mix cool, cover, and let it rest overnight so the flavor gets time to actually happen.

02 before dawn

Rolled by hand

Every bagel is shaped one at a time. No machines. That's why they look a little different — and taste better for it.

03 first light

Kettle-boiled

A copper kettle, a scoop of malt, and 45 seconds a side. This is the step most shops skip. It's the whole reason for the chew.

04 opening bell

Hearth-baked

Straight onto hot stone, seeded side down, until the crust crackles. Out of the oven and into the case, still steaming.
