Our Craft

Chocolate Made with Old-World Patience

Byrne & Carlson is a small-batch chocolatier rooted in the confiserie traditions of Belgium and France, brought to life on the coast of Maine. We work with single-origin and ethically sourced cacao, hand-tempering each batch to achieve that signature snap and luminous finish.

Every piece is made in small quantities, by hand, using techniques refined over decades of study and practice. The result: chocolates that taste of place, care, and craft — not a factory line.

Our flavors draw from the Maine landscape and season: sea salt from Downeast, wild blueberry, black spruce, apple brandy from nearby orchards.

We select single-origin cacao from ethical growers — beans with terroir, story, and conscience.

Temper

Hand-tempering on marble gives our chocolate its glossy finish, clean snap, and silky melt.

Fill & Mold

Ganaches, pralines, and caramels are piped by hand into custom molds, each piece individually finished.
